A little more enthusiastic about cooking again. This was yesterday’s dinner.

Trying to conceptualise a tomato based sauce that I can do from scratch, which means no bottled jars of sauce from the supermarket. This is just a base for a sauce to add other kinds of meat/seafood and would go with pasta.

The idea is to drizzle a few tablespoons of oil in a pan, simmer a few cloves of chopped garlic until golden brown, keeping the pan steady at medium heat. Add some onions, carrots and fry those until soft. Add tomato paste, and canned tomatoes. Add sugar, salt and pepper. Oregano and basil. Paprika. Either vinegar, lemon juice or a splash of white/red wine, depending on the meat/seafood that is going in. Let it simmer until it becomes slightly thickened. I think that’s roughly 15 minutes cooking time to reduce the water content from the canned tomatoes. Chopped parsley will always go well as a last minute addition to vary the taste.

Heh, hopefully I will remember this recipe when May comes. Just want to cook up some stuff and feed people.
